Yummier Healthier Waffles

I took the original ingridients and substitute healthier options. You can make it as healthy as you want by making additional changes, but the below recipe has already been tested and tried by my non-health concerned husband who loves waffles and only cares about taste. He approves!

This will make about 8 waffles so you may want to double it if you want to get some leftovers to freeze and use for the week. 
INGREDIENTS

  • A waffle iron hot and ready to go
  • 1 cup whole wheat flour 
  • 1 cup all purpose flour 
  • ¾ cup of white sugar, all natural sugar, or sugar alternative 
  • 3 teaspoons of baking powder
  • 1 teaspoon of baking soda
  • 2 eggs (or 3 egg whites or 2 egg replacement , I used farm fresh eggs) 
  • 1/4 cup melted butter
  • 1/4 cup coconut oil 
  • 1 cup almond milk ( add up to ½ cup more if needed, I added 1/2 cup 2% milk- it makes a HUGE difference)
  • 1 teaspoon of vanilla
  • Topping of your choice, but I recommend fresh fruit as covering it with syrup and butter depletes the point of being healthy , you can add a dollop of light cool-whip for extra fun


The key to substitutions are to replace the fattiest parts (eggs, butter, oils and dairy) with lighter, healthier alternatives.

Coconut oil is a great butter or vegetable oil replacement because it's sweet and heart healthy.

Instead of eggs with the yolk you could use egg whites, but you will need more. Or you can use an egg replacement. My favorite is this :

2 tblspn water
1 tblspn oil (your choice)
2 teaspoon baking powder
= 1 egg

I also used vanilla flavored almond milk which made the waffles very sweet, but the batter was a little thick and crumbly after cooked so I added 1/2 cup of 2% milk and that solved the problem. 

However, if you are dairy free and want to stick to only milk alternative, it really wasn't that big of a deal, but my husband really prefers the regular milk waffles. 


Directions:
  1. Beat eggs, sugar and melted butter/coconut oil  in a medium bowl. Add the flours, baking powder, baking soda and half of the almond milk, mix well. Add the remaining milk, continue mixing. Batter may be thick so add the 1/2 cup of 2% milk. This will also help the texture to be richer.
  2. Make sure your waffle iron is ready, pour ¾ cup of batter or the measurement your iron calls for into the center of the iron. Spread out evenly as needed and then close the lid and cook according to manufacturers instructions.
